Chicken Avocado Filo Parcels

I mentioned the other day about the Chicken Filo parcels I'd made so thought I'd share. This was the end result. I forgot to take a happy snap of them opened, so you'll have to trust me that they were cooked beautifully and tasted scrumptious!
With a little help from the munchkins we flattened some chicken thighs and rolled them with some cubed cheddar and a slice of avocado inside. I also made some with pizza sauce instead of the avocado and sprinkled a little parmesan on top so I knew which ones they were. Turns out Miss M still won't go for avocado, but at least she tasted it.

Each thigh was wrapped in 2 sheets of filo, generously spread with melted butter before being baked at 180 degrees for around 40 minutes.

Beetroot Walnut Dip

I'm not sure whether it's Australia Day or summer in general that does it, but my goodness our household has been going through the beetroot recently! We usually just eat the tinned, sliced variety but when I saw some whole in the fresh food section I thought we really should try something different. The ones I bought were already cooked, so I pondered about making a dip seeing as I've had some success with our previous #52NewFoods ingredient, Avocado made into guacamole. Google led me to Julie Goodwin's recipe and I took it from there.

I roasted the 200g walnuts and blitzed in my blender before adding the 5 small beetroot, 200g feta and a good sprinkle of garlic powder and blitzing again.

While this was lovely it pails in comparison to one my girlfriend made just a few days later. Turns out all you need for cracking beetroot dip is a tin of beetroot, a block of Philly cheese and some garlic. I think I'll be asking my mothers group for recipes before Google in the future!

Mango Macadamia Bliss Balls

Have you been #52NewFood-ing? I must admit I've dropped the ball a little with our change of routine in the new year. But one thing I've been wanting to get Miss M to try for a while is nuts. We've avoided them the past few years as there's been a ban on them at her centre/s but this year it's only peanut butter that's off the menu and I would love to see her enjoy the flavour and textures that abound in the variety of nuts that are readily available these days.


One thing I thought would be a sure fire win was to mix up some bliss balls with my favourite nut - macadamia. And what better to go with it than mango? I soaked the dried mango pieces (about 300g worth) in hot water for a few minutes while I blitzed a roasted 500g pack of macadamia/cashew mix. Then added the drained mango and blitzed again. My poor blender didn't like that too much so I added some of the soaking liquid but things still didn't go to plan so I removed part of the mixture and blitzed it in batches.
Miss M helped to push the mix into a cake-pop mould and I rolled the rest by hand. Rolling the finished balls in a little desiccated coconut.
These were nice and not too sweet fresh from rolling. I think there were maybe too many cashew in the mix and a more even fruit:nut ratio would have resulted in a tastier morsel.




I sent some to school with Miss M but must admit they weren't the hit I was hoping for. Regardless I will be attempting them again at some time. Maybe when I finally invest in a food processor so my poor blender doesn't shriek at me again :-)

Quick Vege Hit

Have you been #52NewFood-ing? I recently tried avocado again and perhaps our differences have been settled. :-)

Following a rough recipe I picked up at a playdate, we've been enjoying guacamole for a light lunch. Avocado, sweet chilli sauce, lime juice, salt and pepper all smushed together and served on wholegrain crispbread with fresh tomato with extra salt & pepper.
The perfect accompaniment for my all time favourite summertime drink -Gogo Juice (recipe in this previous post)

Chicken Broccoli Soup

Just a quickie today. This was my snack at work - chicken & broccoli soup with croutons and a mint chocolate. All served in my ComplEAT Energy Booster.

The soup was so simple - 500g chicken thighs, roughly diced; 1 head of broccoli roughly chopped, 500-750mL chicken stock, salt & pepper to taste. Pop it all into the Kambrook Soup Simple and select 'smooth'.

For the croutons I took some of our sandwich offcuts and tore into small pieces. Fry well in *lots* of butter and garlic.

Roast Pumpkin Cookie Fail

Have you stocked up your pantry ready for the back to school yet? I must admit I haven't :-( I tried the 100 biscuits recipe that's been getting around for a while and let's just say it won't be getting added to the repertoire.

I tried all the usual suspects - plain, sprinkles, sultanas, chocolate, and I wasn't impressed. Then I thought - why not pumpkin? Pumpkin scones are an absolute hit here so why not change things up a little?

Well. . . 

I mixed through some mashed roasted pumpkin (yes, I like a little colour on my roast veg) and sprinkled some with nutmeg, others with cinnamon sugar and a few were left plain. I didn't mind the cinnamon ones but I think I was the only one. *sigh*

But you know what? We gave it a go, and big smiles from Mummy for tasting (because 'trying' insinuates something might be difficult - the things you learn ^-^)

Soup Maker Strawberry Fruit Leather

Did I really not end up sharing my attempts at making fruit leather last year? While I wouldn't say they were a complete success Wouldn't say they were complete failures either.









There were a few recipes online that basically involved blitzing fruit and/or water and/or sweetener. I chose to use my failed strawberry jam.


My first attempt turned out a little limp and undercooked.
So I popped it in for a little longer. . .
Perhaps that wasn't such a good idea o.O


So I tried again with the next batch, making it a little thicker this time
And a longer,slower cook time made a big difference too - only I forgot to take photos at the end - D'oh!

Sweet Potato Quinoa Apple Stuffing Balls

What else is there to say? The simple little yummies are just that. Simple. . .little. . .yummy. Perhaps they wouldn't have been quite so simple had I included all the ingredients I'd intended, but that's another story!

The original recipe called for nuts which meant this wouldn't have been able to go to Kindy. Thank you to Kendra at Biting the Hand that Feeds You for the suggestion of sunflower seeds! I had bought them. . . and laid them out. . . and then completely forgot to add them in *sigh*. I also forgot to rinse the quinoa like Kendra suggested which might explain the slight bitterness of these. Unfortunately it turned off Miss M & Mr Loving. Looks like it's back to his Quinoa Stroganoff - no arguments here! Back to the task at hand. . .

I took inspiration from our #52NewFoods Cookbook and combined 1 part roasted apple, 1 part roasted sweet potato and 2 parts basic quinoa in a bowl. Pressed the mix into a silicon cake-pop mould and let it set in the fridge. Later I rolled the balls in bread crumbs. Next time I think I'll cut the roasting ingredients smaller, or puree them before mixing. And I'll also include some crunch. Those sunflower seeds I forgot :-(. What do I love most about these? Leftovers! We had roast pork with roasted vegetables and apple. Easy enough to add a few extras and then the second night we served with quinoa instead of potatoes. How simple is that?

Green Salmon Pasta with Zucchini Ribbons

Can you tell I'm thoroughly enjoying our #52NewFoods cookbook? Ok, so zucchini isn't new for us, and neither is this dish (there is one version of the recipe in this previous post) - but zucchini ribbons are.

I have no idea why I've never made zucchini ribbons. They are so easy and create such a different texture than simply slicing, dicing or grating as I would usually do. We didn't try them raw as they are featured in the book, but that is now being added to the list :-)

What do you think? Looks pretty yummy, right? Also in this version - mushrooms, baby spinach leaves, broccoli, spring onion, salmon, cream, garlic and of course pasta.

Quinoa Stroganoff

 I can't take credit for this creation. Mr Loving came up with it.

In the stinking heat that has been our early introduction to summer this year it has been difficult to come up with dinners that are satisfying, healthy, balanced and most of all not going to steam up the house even more. This stroganoff sauce added the perfect amount of flavour and vegetables to our meal.
 Served with store bought BBQ chicken and basic quinoa from our 52 New Foods Challenge cook book.

  • Sauté 2 medium brown onions and a few cloves of garlic in a little oil. 
  • Add 4 rashers of diced bacon and brown well. 
  • Roughly chop half a dozen tomatoes. Add these and 2 cups of chicken stock to the mix and allow to simmer until sauce starts to thicken.
  • Finish with a tablespoon or so of paprika and a good cup of sour cream.
  • Season to taste.

Yummay Edamame

I've been playing with my new toy tool in the kitchen - the 52 New Foods Challenge recipe book is brilliant! The recipes are simple and achievable - even on a 'school night'.

Although this one I did try on a weekend. Perhaps a 'school night' would have been better - I may have been paying enough attention to the ingredients list and *shelled* the beans ::facepalm:: 
(Ok, so maybe it's because I've only ever eaten them at Sushi trains and didn't even think about shelling them - shhh!)

So my first attempt didn't really 'pop'. . . 

. . . but it sure tasted good.

These little babies actually ended up being my lunch. Yum-may!

But the Edam-yum-ay fun didn't stop there. A few nights I asked Miss M what sort of potatoes she'd like for dinner, expecting an answer of mashed or chopped. Instead she replied 'Grinch Potatoes'. Well of course! It is the season!

I remembered my back-up bag of Edamame in the freezer (I was so excited to find them at my grocery I bought two!) Popped them in the steamer alongside the sweet potato and carrots until tender.

Mash your potatoes well (we whisk in a raw egg instead of milk - trust me! Try it!)

Then shell your Edamame into the mix

I used a fork to mash them through but a potato masher would have been the smarter choice. I decided they weren't quite 'Grinchy' enough, so turned to Miss M. 'How do you think we can make the potatoes more Grinch?'
'Add more' she replied without skipping a beat! Well, I didn't have any more so mashed in a handful of frozen peas instead. Don't forget to season to taste.

And served on her Fred Face Plate, needless to say she was eager to sample!

Loving a Challenge. . .

Have you heard about Crunch a Color's 52 New Foods Challenge? Try a new food each week for a year, how simple is that? And there's even an inspiring cookbook you can use! I was lucky enough to receive a copy late last week and couldn't wait to get started! I flipped through the book and one of the recipes that grabbed me was the Whole Wheat Flour pizza base. I didn't have all the ingredients so I opted to try out a variation of something we are familiar with. 52 New Foods doesn't just celebrate new foods, but also new cooking techniques and variations on the old. So Pumpkin, Spinach & Ricotta Pizza was born!

Start by roasting some pumpkin/squash. Coat lightly with oil and bake at 180-200 degrees until soft and tender. Depending on the size of your pieces anything from 30 to 90 minutes. Yes roast with the skin on! It is delicious and gives the cooked pumpkin a fantastic texture!

One of the best things about this pizza is that you get to have roast veggies for dinner the night before! As you can see I like a touch (or more) colour on my roast pumpkin.

Don't forget to bake extra pumpkin and once cooled store in a covered container in the fridge. You can also toss in whatever other leftover vegetables you have. These peas were a perfect addition.

Spread your chosen pizza base (this is a store bought tortilla, the girls had corn tortillas, but I am looking forward to making this on the whole wheat flour base from the 52 New Foods book) with a little sauce and *lots* of pumpkin.

I simply scooped the flesh from the skin and smushed it onto the base, swirling and spreading. This is a great step to get the children involved in!

Blanch some baby spinach leaves in boiling water for a minute or two until bright green and tender. Drain and squeeze away excess moisture. You can leave whole, but I like to roughly chop.

I always have some zip lock bags of capsicum/bell peppers in my freezer. Whenever I see them on special I grab a few and if they are not used straight away they get sliced or diced and thrown straight in. They are perfect for adding a little colour (and extra vegetables!) to pizzas, pasta sauces, soups, you name it!

One you have all your ingredients prepped you can call in the creative genius that is your offspring to help layer up your pizzas. Start adding your ingredients form the outside of the pizza and drag them inwards rather than dumping them all in the middle and spreading them outwards. See, my time at Pizza Hut did prove educational!

Spinkle a little grated mozzarella on your pumpkin and tomato paste base, then add a little sliced ham, pepperoni, diced capsicum/bell pepper, baby spinach, some of those peas for last night's dinner gently smashed and a few dollops of ricotta.

Lastly add another layer of grated mozzarella (or any other hard grated cheese) and a swirl of sauce if desired. 

Once Miss M saw my BBQ sauce swirl she wanted a tomato sauce swirl too.

Bake at 180-200 degrees until the cheese has melted and started to turn golden. The mini sized ones took about 15 minutes.

And the mummy sized one took about 25, but I do refer a little more colour :-)

How gorgeous is that!

A perfect way to try something new is to mix it with something old - who doesn't love pizza?

And these bases are so thin that you can roll each slice into a perfect toddler or baby sized morsel. Not that they lasted long enough to photograph!

And what do you do with the pumpkin seeds? Well roast them of course! There's a simple recipe in the 52 New Foods book that's going on my make list (since my first attempt was less than successful).
