Bunny Footprint

Hoppy Easter Every Bunny!

Has the Bunny made it to your place yet?

I actually made this snack for myself - shhh ;-) Sliced apple with Nutella - yum!

The bunny footprint was made using a piping tip for the foot & the 'Panda Assistant' from my CuteZCute cutter for the toes. I then rubbed a little Nutella in, as you do :-)

Bunny Bottom Cupcakes



There are so many versions of these cute little Bunny Bottom cupcakes I really don't know who to give credit to - I know the idea wasn't mine :-)


















These simple cupcakes are a basic sponge iced with buttercream. Some coconut and marshmallows to decorate. Detail added with gel writing icing.

Easter Egg Lunch






 I've been wanting to try sandwich balls for some time now, but Miss M loves her cheese & ham sandwiches (not ham & cheese, heaven forbid!) so I didn't think they'd work.


I love proving myself wrong :-)

This was Miss M's lunch yesterday. . .


I followed the tutorial from affiliate Neat2Eat's book 'Everyday Lunchbox Recipes & Fun with food' and being the first time I've made them, with a less than ideal filler, I'm quite happy.




I popped them inside some little plastic eggs from the cheap shops & added another egg filled with sultanas.















I had another go at cheese bites in silicone moulds (which I haven't tried since this repurpose post back in November last year). I think I over-cooked them this time, and I was too impatient for them to cool properly before unmoulding.



None the less, I think they look the part with our standard snack :-)

Popcorn Easter Eggs





This year's classroom Easter treats are popcorn eggs :-)



















Have you noticed a few more popcorn related things 'popping' up on the Loving Lunches social media pages? I've been lucky enough to receive a Kambrook Flutter Butter Popcorn Maker, and can I tell you I'm loving it! There is a full review in the works as well as a giveaway so stay tuned.


















Anyway, back to the treaties! I used this recipe as a guide.
















After melting some butter & marshmallows in a large pan, I added some popped corn, gave it a mix & loaded it into some oiled egg moulds from the cheap shops.















 One batch yielded 8 super large eggs & 2 regular sized eggs.



















After allowing to cool, the moulds are removed & voila!




You can see the pink tinge to these ones from the coloured marshmallows. . . .





So I made another batch. . .



I think using just the white marshmallows looks much nicer.



I also added more popcorn this time around.


Second batch yielded 8 regular sized eggs & 4 super large eggs


They did remain a little sticky but I didn't refrigerate them. I wrapped each in a little cling film before packaging up in little Easter gift bags for the kiddies.

Easter Classroom Treat





These simple bunny biscuits were the treat sent to daycare last year for Miss M's class mates.

Made from Arnott's Milk Arrowroot biscuits with a royal icing. Marshmallows cut in half & dipped in sprinkles for ears, mini marshmallows for teeth & mini florals for eyes & nose.







Packaged in cute little bags & an egg-carton basket.

















Teachers received a more grown up version :-)

Easter Bunny Gingerbread Man Sandwich

I'm sure I'm not the first to create a bunny out of a gingerbread man cutter but I can't find where I would have 'Pinned' it. The idea is similar to these Reindeer.

Our filling is our favourite ham & cheese.

Details are made from ham, celery, carrot sticks & black sesame seeds. The gingerbread man arms are amputated & used to make the bunny lips.

This little guy on the right was my first attempt, with ham off cuts, sultanas & black sesame details. I do think take two turned out much nicer :-)

Happy St Patrick's Day




Top o' the Morn' t' ye'

Hopefully I haven't offended too many people with my poor Irish accent. That and the fact that I realise now I forgot the 'St' part of Saint Patrick in the lunch that Miss M took to daycare on Friday.

I packed some of this year's 'Green Eggs & Ham' (which I spoke about here) with some cherry tomatoes and tomato sauce.




And this is what I took for lunch this week - some Green Eggs & Ham, mini cupcakes (just because I can) and some green grapes.


This year's Green Eggs & Hams were made in a muffin tin & worked out a bit nicer than last year's in my opinion.

Mummy Lunch

 Here's another flashback I haven't got around to sharing yet.

My lunch this day consisted of yoghurt with mango, mini choc treat (Ghiradelli, yum!), dinner leftovers (roast chicken with warm potato salad. That's dressing & gravy in the cherry container), rose cupcake (a reject from this blog post) & some Pepperoni from Walkerston Country Meats with cheese.


Served in Tupperware square round & Sandwich Keeper Plus. The yoghurt is in a Decor container. The fork & spoon set is from All Things For Sale/Bento USA

This was the first time I had used Baran and was reasonably impressed with the results. Considering the two items I was attempting to keep separated were both liquid-y I think it did a rather good job. Come lunch time the mango juices had mixed with the yoghurt a little, but I think I may have over filled a bit.

I think it's one of those things that, being I've never used it, I'm not quite sure how/when to. I'm used to my ingredients being mixed come lunchtime :-) I can see it would be very handy with stews/curries to keep the rice separate, or just for a bit of quick & easy 'bling'.

Pi Day

One thing I have always had a sneaking suspicion  of is that there is a 'Day' for every day of the year. I found out that there is an International No House Work Day recently. . . I will have to remember to write that one on the calendar. 

Another recent discovery is 'Pi Day' celebrating maths on the 14th of March (3/14 in America). So, who needs an excuse to eat 'Pi'?






These simple pies are made by blind baking the shortcrust pastry - I cheat & buy the frozen stuff. . . 





. . . then fill with some left over Spaghetti Bolognese mince

 Then I piped some creamy mash (also leftovers) on top.

I must admit I used my Kambrook Speed Serve with the mash - it's so quick & super creamy!


Bake until warm & browned.
