Pie Cases

Ahhh, the school holidays are drawing to a close, and it's time to start thinking about what to pack for the year ahead. But we still have a week left of our 'home holiday' before Miss M heads off to Kindergarten. And then, you know what? It's time for a public holiday! Australia Day is just around the corner so I thought I'd share some appropriate little goodies with you.
These fancy pie cases are made from a slice of bread, pressed into a muffin tin and baked until golden - how easy is that?!?!

I realise being Australia Day I should have filled these with a lovely lamb mix, but we were having our stand-by Tuna Dish, so that's what I used. Silly me left the egg in the recipe too, so I can't even freeze them for use in lunch boxes since our Kindy is egg & nut free - it just means more for my lunches :-)
