Bread & Butter Pudding Single Serve

Ahh. . . holidays at last! But what to do with that half loaf of bread that didn't quite get used this week? Or those crusts you've been saving from your little person's sandwiches?

Make yourself a bread & butter pudding I say! And don't share - you'll be doing enough of that over the break ;-)


Take 2 cups of bread scraps

Tear into pieces and place into a large bowl or soup mug

Mix in a dessert spoon of butter or margarine, and a dessert spoon of your favourite jam. I like plum :-)

Give it a good mix. Feel free to use your hands

Combine 1 tablespoon of custard powder with 1 tablespoon of sugar

Add 1 cup of milk and stir to combine

Pour over your bread mix until it is well soaked, but not completely covered.

Zap in a high microwave for a minute or two depending on the wattage and how cooked you like your pudding. For me I like a little on the firm side so I go for 2.

This is great served as is but is especially nice hot from the microwave with cold cold ice cream. . . so it can melt and get all gooey. . . . And if you're game try sprinkling with some brown sugar before you cook it. . . or a little cocoa .. . or both. Please excuse my drool, and enjoy your Friday night!
