Naughty Chocolate Crackle Pudding

2013 NN Choc Crack Pud

Loving Lunches and The Kids Menu have teamed up to give your classic Christmas recipes a Naughty or Nice makeover.  We have a new Naughty and Nice recipe for each day of the week - So whether you're Naughty or Nice this Christmas, we've got recipes for you!


You may remember my attempt at these last year. This year they got a mini make over. . . Naughty Style! You can find the inspiration for this recipe here.

Ingredients:
  • 3 cups cocopops
  • a dozen white marshmallows
  • 2 TBsp pouring cream
  • 2 Tsp drinking chocolate
  • 200g Cherry Ripe
  • Spray oil (depending on what moulds you use)
White Chocolate Shell Ingredients:
  • 100g White Chocolate
  • 50g coconut oil
  • 2 more TBsp pouring cream
  • Red M&Ms (or smarties)


Combine cream, marshmallows, cherry ripes, drinking chocolate in a microwave safe bowl & heat on medium for 1 minute. 


Stir & heat in 30 second blasts until everything is nice and runny


Add in your cocopops and stir to combine. I thought mine looked a little damp so I added some more pops.


Now the fun part! Grease your moulds and fill. I laid some baking paper in this giant coffee cup to help with the unmoulding


This one I pushed the mix to the outside to create a hollow, you'll see what that's for soon.


I also made some muffin sized solid & hollows


Yum! Pop in the fridge until firm. A few hours should do it, but I left mine overnight. Now you can make your white chocolate shell. Simply melt your white chocolate, coconut oil and cream in a microwave safe container & stir to combine. You can make this in advance & store in an air tight container. If it goes solid, simply warm in the microwave or stand our container in some hot water until the mix becomes liquid again. You may need to stir it again.

You could enjoy now, but before you get too excited, fill your hollows with some Baileys Ice Cream from yesterday's post. Cover with cling film, or store in an air tight container & freeze for a few hours, or overnight.


Just prior to serving, unmould your beauties


And admire your handy work


Of course you could enjoy as is . . . 


Or you could smother with the white chocolate shell you made earlier


And top with some red M&Ms


You can freeze them again at this point to firm them up a little.




There are so many options for changing up the chocolate bar and the cereal here, the mind boggles at the possibilities. And then you throw in the thousands of ice cream flavours you can pop in the middle, my Lordy! You could of course top with plain melted chocolate or store bought ice-shell (like Ice Magic), but this way you get an extra whack of coconut.


Of course you also have to sample your handy work :-)
