Quick Slow Curry



I told you yesterday about the Kambrook Quatro Multi Cooker I received a few weeks ago and how it was going as a steamer. Today I thought I'd share some the Slow Cooker things I've been dabbling in.

And my favourite to date - Quick Slow Curry!

Saute onions

While onions are browning, mix your flavour into coconut milk

Saute chicken (love the sauté function means less washing up here!)

While chicken's cooking, chop some vegetables. I actually made the potato & sweet potato pieces a little to large for the 4-5hrs this was in the cooker. Live & learn. The capsicum was fine.

Toss it all in and stir to combine.

Pop on the lid and walk away!

A few hours later, give it a stir & make sure everything is cooked through

We served this with rice and naan bread

Delicious! To make this a family meal you could add pineapple rolled in coconut or a dollop of sour cream to cut the spices for a toddler palette. For Honey (7 months) I simply scraped off the sauce and patted with a paper towel.

So what do I think about the Kambrook Quatro Multi Cooker as a slow cooker?

Loving:
  • I know 'they' say that a 3L bowl would be best suited for couples and a 4-5L for small families, but I've found the 3.5L perfect for us. For meals where I've served with a side (generally rice) one cook has lasted us two meals.
  • So easy! Pop it in & walk away
  • The lid is dishwasher safe
  • Easy clean non stick removable bowl
  • Glass lid (with steam vent) so you can see how your goodies are going
Loving a little less but liveable:
  • You can't control the temperature of the slow cook. It's either on or off, no in between. Some recipes call for 'turn your slow cooker to high'.
  • You need to cook defrosted meats and I'm generally not that organised. This is a fault of the operator, not the machine!
  • Only the lid is dishwasher safe, but we don't have a dishwasher so this isn't really an issue for us.

Overall:
I've never had any experience with slow cookers before. The closest I would have come is doing a stew or a corned beef in a stock pot on the stove top. This is so much easier! I can't wait for winter and a few more cool nights to really enjoy a good casserole and I think soup would also be great. Imagine waking up in the morning to a kitchen full of the fragrance of fresh pumpkin soup. What a way to start the day!
