Let It Go Risotto




I mentioned the other day that this is my first ever experience with risotto. Unless of course you count watching Master Chef contestants fail every time they try it. . .  if Master Chefs can't get it right, what hope do I have? Well, let me tell you it' called the Kambrook Quatro Multi Cooker and you can win one for yourself! Read on, McDuff!

Recipe inspired by this one at beyond jelly.


Finely slice one onion, one carrot, three celery stalks, garlic to taste (I used 2 cloves) and roughly chop a good handful of mushrooms

Roughly chop a quarter of a head of cauliflower and half a pun net of cherry tomatoes (or roughly the same volume in regular tomatoes)

Defrost 2 cups of frozen green vegetables

Add 1 Tbsp butter and 1 Tbsp oil to the Kambrook Quatro Multi Cooker and set it to sauté.

Saute mushrooms until golden

Add your carrot, celery, onion and brown them well.

Add 2 cups of aborio rice and cook for a few minutes, still using the sauté function

Following the directions on your packet of rice, add the appropriate amount of liquid. I used chicken stock

Add the rest of your veges and give it a good stir. Switch the unit to the rice cooking function. . .

Toss your greens into the steamer basket. Pop the lid on & let it go! I love that step :-)

In around 15 minutes the unit will have done all the hard work for you. Steamed greens. . .

. . . and a lovely velvety risotto. Because this was a family meal, I served up before adding the tuna, but I'm sure you could add 300g (ish) of your preferred tuna flavour with the last of the veges instead of mixing it through now.

The girls had drained tuna in spring water mixed through theirs. Miss M had hers on her Fred face plate.

Honey had hers in her divided dish. I like to keep the top section empty for any bits that find their way to the floor :-)

I chose (undrained) tomato salsa. My oh my! This one is going in the book for a repeat performance!!
