Last week was a bit hectic and one day when y enthusiasm was low I turned to Miss M's homework for some inspiration. She'd just practiced her letter 'S' and had drawn a Sun and her cousin (whose name starts with 'S').
Using the baking paper transfer technique I copied her drawings to some cheese with a FooDoodler. Lunch done!

Centenary of ANZAC Lunch
I had grand plans of making an elaborate lunch for Miss M for the school ANZAC celebrations but the universe had others plans. Perhaps I will perfect my ANZAC pavlova for remembrance day ;-)
A simple Vegemite sandwich with FooDoodlers and some food picks to represent a poppy and '100'. Snacks were ANZAC biscuits (which I didn't even bake this year), yoghurt in a Sinchies pouch (below sandwich), pepperoni, cheese & crackers for brain break and a popper of milk.

Ladybug Flower Sandwich
Another bug lunch to round out the week. This one was made with a cute sandwich cutter and some sprinkles - how simple it that?
Sides of Sinchies yoghurt (under the sandwich saver), slinky apple with choc/nut dip in the centre, salami/cheese/crackers and a milk popper.

The Very Ugly Bug Yumbox Edition
I mentioned Miss M borrowed The Very Ugly Bug form the library in this previous post. I loved it so much I decided to make two lunches based on it :-)
I made her bogey eyes with a marshmallow; wobbly wobbly head with a squished sandwich section; horrible hairy back from a kiwi fruit; and wonky purple legs from some purple carrot, served with dip.
Her little buggy friends came along in the form of food picks in the rest of her sandwich.
Oh, and there's some yoghurt there too ;-).

The Very Ugly Bug Easy Lunchbox Edition
Miss M brought this book home form the library and I loved it! I won't give away the ending but let's just say it was a sweet 'you're perfect the way you are' story.
I decided to make a lunch that night and it was a quickie. Yoghurt, sliced apple with carrot, cheese with black sesmame seeds and nori offcut, sandwich with a quick cheese art. All served in our Easy Lunchboxes.
Ugly and Easy. . . what else could a bug want?

Mummy Didn't Make it to the Grocer
Some weeks you just have one-of-those-days all week, right? It's not just me?
This Easy lunch was thrown together from what we had on hand. Some grapes and blueberries, wafer biscuits, yoghurt (in a Sinchies pouch and drink bottle sleeve under the sandwich) and Lunch Punch Vegemite sandwich with the crusts included as a field for the cow to graze in ;-)

Sponge Bob Lunch
I love this simple lunch! I picked up this sandwich cutter in the post Christmas sales as part of a stocking and finally found the chance to use it. Miss M doesn't even know who Sponge bob is, but she likes his smile :-D
You can just see the Sinchies yoghurt pouch below the sandwich saver of our Nude Food Movers Rubbish Free Lunchbox.
Sides were salami, cheese & crackers for brain break and grapes for afternoon tea. I had to include pineapple somewhere so juice it was.

BBQ Chicken Drumsticks
Don't you just love a cheat dinner? Especially one that can be repurposed into lunches! I must admit I haven't sen this for Miss M for a while. It seems every time I increase the recipe our appetite increases too ;-)
As with most dishes there are more ways than one to achieve the result. This batch was made by simply laying some drumsticks on a lightly sprayed, lined tray and brushing with plain old BBQ sauce.
Baked at 180 degrees for 40 minutes, turning half way. These were a little overdone, but I enjoyed the extra smoke in the flavour.
Another of my favourite techniques is to marinate in a freezer bag.
Simply toss in your ingredients - this time I added some powdered garlic, paprika, mixed herbs and worcestershire sauce.
You can cook tonight, or freeze for later. I find this a great one to batch up. One bag for today, another bag for later.
When you are ready, bake away! You can roast them like the previous batch, giving you the extra texture hit. . .
Or cover and bake in a dish. This method will give you a moister end result and preserve that lovely sauce. Perfect for drizzling over roasted vegetables or rice. Both of which are great accompaniments to this dish.
From dinner plate. . .
. . . to lunchbox.
A little frozen mac & cheese complete this lunch.
And some corn with extra sauce in the dip container for this one.
